Our ingredients are fresh, Australian, Victorian, 100% Australian. A lot of effort and thought has gone in to sourcing high quality raw materials to then create unique quality artisan product’s.

100% Australian pork and beef

Customers can be assured that Puopolo use 100% Australian pork and beef which is all sourced from Victoria.

Over the last 40 years we’ve built solid relationships with other family owned and run farms, some of which are run by 3rd generation family members.

With these relationships in place we’re able to source the finest pork according to our needs and specifications to then create all our true artisan salami and cured meats.

All the pork sourced from our farmers are then processed onsite by our highly skilled butchers.

The secret ingredients: time, conditions and dry ageing

Blending ingredients

After this stage all meats are blended with salt and spices strictly following our original family recipes and know how passed down from generations.

In order to handcraft outstanding smallgoods, we believe it’s important to know where our raw materials come from and spices and other ingredients are no exception. We work closely with our ingredients suppliers and source everything we can here in Australia, ensuring only the best ingredients to go in to our product.

Spices and ingredients are then all blended on site to formulate our recipes and knowing what goes in to our products we believe makes all the difference in the end result.

But the most important step is the final one: dry ageing. We place all our products in state-of-the-art dry ageing salami rooms to obtain the correct stagionatura (ageing).

Since Australian climatic conditions are vastly different to the temperature and humidity balance that occurs in the Mediterranean area, the use of dry ageing salami rooms allows for the perfect drying conditions for ageing salami and air dried meats all year round.the use of separate fridges set to perfection for each kind of product and the consistent control during the ageing days is essential.
